Lotus Biscoff is one of the chocolates we reach for again and again at the counter, so it was only a matter of time before it became a cookie. This one pairs the caramelised, spiced flavour of Biscoff with a swirl of berry jam that cuts through the sweetness — soft in the middle, crisp at the edge, with chunks of Biscoff cookie running through it.
It’s a two-stage bake: a short freeze so they hold their shape, then a bake, top, and bake again so the jam and spread sit on top rather than sinking in.
What you’ll need
Makes 16 cookies.
- 140g butter, at room temperature
- 100g brown sugar
- 50g white sugar
- 1 egg, at room temperature
- 135g Lotus Biscoff spread
- 1 tsp vanilla extract
- 210g all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 100g white chocolate chips
- 90g Lotus Biscoff cookies, chopped into chunks
- 50g berry jam
- To finish: extra Lotus Biscoff cookies, Biscoff spread and berry jam
Method
- Beat the butter with the brown and white sugar until pale and creamy.
- Add the egg, vanilla and Lotus Biscoff spread, and beat until smooth.
- Sift in the flour, salt, baking soda and cinnamon, and mix to a soft dough.
- Fold in the white chocolate chips and the chopped Biscoff cookie chunks.
- Swirl in the berry jam with just a couple of folds — you want it marbled through the dough, not mixed in.
- Roll into 16 balls, set them on a lined tray and freeze for 30 minutes so they keep their shape.
- Heat the oven to 200°C.
- Bake for 13 minutes, then pull them out and top each with a little berry jam, a drizzle of Biscoff spread and a few extra cookie chunks.
- Back in for a final 8 minutes, until the edges are set but the middles still look soft.
A couple of tips
- Keep the jam marbled. If you mix it in fully the dough goes wet and the cookies spread — a few folds is plenty.
- Underbake slightly. They firm up as they cool, so pull them while the centres still look soft.
