These are one of those brunch things that look like a lot and take barely any effort: a crisp waffle with Oreo chunks folded through the batter, finished with a quick whipped Oreo cream and fresh strawberries. Creamy and crunchy at the same time — hard to stop at one.
No waffle iron? The same batter makes very good pancakes.
What you’ll need
Makes about 4 waffles.
For the waffles
- 200ml milk
- 1 large egg
- 115g flour
- 15g baking powder
- 2g salt
- 75g raw or brown sugar
- 50g butter, melted
- 170g Oreo cookies (1 pack), chopped
For the Oreo cream
- 120g cream cheese
- 60ml heavy cream
- 10ml vanilla essence
- 3 Oreo cookies, chopped
To serve
- More Oreo cookies and fresh strawberries
Method
- Whisk the milk, egg, flour, baking powder, salt, sugar and melted butter together until smooth, then fold in the Oreo chunks.
- Grease the waffle griddle and cook until crisp and golden. No griddle? Cook the batter as pancakes over medium heat instead.
- For the cream, beat the cream cheese, heavy cream and vanilla until soft and thick, then fold in the chopped Oreo.
- Top the waffles with the Oreo cream, fresh strawberries and a few extra cookies.
A couple of tips
- Don’t over-mix the Oreo in. Fold the chunks through at the end so you keep proper pieces rather than grey batter.
- Serve straight away — waffles are at their best crisp and warm, with the cold cream on top.
